Loved these! I prepared and froze the patties but did not cook them for a few weeks afterwards. I was worried the cauliflower and overall texture would be affected but I was wrong. They were fantastic both in flavor and texture. They went from the freezer, to the oven, to my plate in record time. I will definitely make them again but I think I will leave the contents a bit chunkier than my first preparation efforts.
Oh, and I made (a couple of times!) the baked tofu cubes we had in class. Just had some for lunch today with rice, mixed veggies, lettuce chutney and a deep fried Masala Katchori picked up from my local veg Indian place (Masala Kitchen on Market Street in downtown Wilmington). I'm really blowing through my supply of Sabzi Masala Mix but am enjoying every minute!
